Cassava "Manihot esculenta"

Cassava (Manihot esculenta) is a resilient tropical root vegetable prized for its starchy, white-fleshed tubers. With a mild, nutty flavour, cassava roots can be peeled and cooked much like potato — perfect for fries, stews, soups, and gluten-free flour. A staple food crop across tropical regions, it's also increasingly popular in Australian edible gardens.

Cassava thrives in full sun to part shade and is remarkably drought tolerant once established, making it well suited to subtropical and tropical climates. Expect plants to reach around 2 metres tall at maturity.

Growing tips: Plant in free-draining soil with plenty of sun. Water regularly when young and reduce once established. Harvest tubers after 9–12 months for best results.
